Recipe- Easy To Make Lauki Kofta Sabzi

Lauki ke kofte is a veg curry in which kofta made with bottle gourd are cooked in light tomato and onion gravy. Soft and melt in mouth lauki kofta makes a delicious change from very rich curry recipes.

Ingredients

400 g bottle gourd Lauki
75 g gram flour besan / Chickpeas flour
1 teaspoon turmeric powder
2 teaspoon coriander powder
Salt to taste
2 Tbsp Red chili powder
Oil for deep frying
¼ cup onion paste 2 medium sized onion
3 Tomatoes pureed
1 teaspoon turmeric powder
1 Tsp garam masala powder
Salt to taste
leaves Fresh coriander
1 Tbsp Ginger green chili paste
1 Tbsp Jeera

Method

- Peel and grate lauki/bottle gourd.

- In a mixing bowl add grated lauki, besan, chillipowder, salt, red chilli powder, coriander powder, coriander leaves in the grated lauki and mix well.

- Grease palms of your hands and make small balls/ kofta from this mix and keep it aside.

- Heat oil in a pan and deep-fry the lauki kofta on low to medium heat.Once they are brown and crisp, remove them on a kitchen paper napkin to drain excess oil.

- In another pan heat 2 tablespoon oil and add cumin seeds and bay leaves. Once they start to crackle, add theonion paste.

- Stir and cook this till they are golden brown and then add chilli powder, turmeric powder, garam masala and salt and tomato puree. cook this till oil starts to separate.

- Add some water to it and bring it to boil.

- Add the fried kofta and cover the pan and let the gravy simmer for another 5 minutes.

- Garnish with coriander leaves and serve the kofta curry hot with rice or roti.
