Recipe- Healthy To Eat Fruit and Nut Bread

Healthy & palatable bread that is super-easy to prepare. This bread serves as a complete breakfast providing you with protein from the egg & the oats, good fats from the nuts and energy from the banana to kick start your day. It can also be enjoyed as a healthy snack with tea/coffee in the evening.

Ingredients

2 ripe bananas, peeled & mashed
3/4 cup self-raising flour
1/4 cup ground oats
3 tablespoons maple syrup
1 teaspoon baking powder
1/4 teaspoon baking soda
1 egg, whisked
1/4 cup oil + 1 teaspoon for greasing
1/4 cup milk
1 teaspoon vanilla essence
11/2 tablespoons chopped almonds
1 tablespoon tutti-frutti


Method

* Combine the self-raising flour, ground oats, baking powder, baking soda, chopped almonds & tutti-frutti in a deep bowl and keep aside.

* Combine the whisked egg, milk, oil, vanilla essence and mashed banana in a separate bowl.

* Add the egg mixture to the dry ingredients and mix till combined. Do not over-mix. Over-mixing the batter can result in a dense bread, however, we would like our bread to have a light & spongy texture.

* Pour this mixture in a greased loaf tin.

* Bake in a pre-heated oven at 180º Celsius for 25-30 minutes or till a toothpick inserted comes out clean.

* It can be served warm but if you want to cut neat pieces, let it cool down completely before cutting it into pieces. It can be stored in an air-tight container for 2 days.
