Recipe- Perfect for Tea Time Oats and Puffed Rice Mixture

Healthy teatime snack packed with the health benefits of oats & good fats from pumpkin seeds & nuts. This guilt-free snack can be prepared in just 15 minutes and stored in a jar for 2-3 weeks.

Ingredients

2 cups thick puffed rice
1 cup Instant Oats
3/4 cup raw peanuts
1/2 cup roasted split chana
1/2 cup pumpkin seeds
1/2 cup cashew nuts (cut into halves)
2 tablespoons oil
1/2 teaspoon mustard seeds
1/2 teaspoon crushed garlic
1 green chilli, roughly chopped
8-10 curry leaves
1/4 teaspoon asafoetida
1/2 teaspoon turmeric powder
Salt to taste

Method

* Heat a deep non-stick pan and dry roast the oats on medium heat for 2-3 minutes, while stirring continuously or till crisp. Take them out in a plate and keep aside. Repeat the same process for puffed rice.

* Heat oil in the same pan, add the mustard seeds, curry leaves, garlic, green chillies, turmeric and asafoetida. Saute for about a minute or till the garlic and green chillies become crispy and golden brown.

* Add the peanuts, pumpkin seeds and cashew nuts. Mix well and roast on medium heat for 2 to 3 minutes. Add the roasted chana dal and saute for about 30 seconds.

* Add salt, roasted oats and puffed rice. Mix well and cook on medium heat for 1-2 minutes while stirring continuously. Keep aside and let it cool completely.

* Once cooled, store in an air-tight container.
