Recipe- Spicy and Delicious Country Chicken Soup

Country chicken soup is a thin clear soup prepared by adding spices with chicken cooked water(broth) in an authentic way. Country chicken soup / Nattukozhi soup is a traditional soup recipe in the countryside of south India. It is a healthy soup with gives warmth to the body during the winter season. This soup is tasty and simple like usual chicken soup yet more nutritious.

Ingredients

Nattukozhi – 100gm or few pieces with bone
Turmeric powder – ½ tsp
Shallots/small onions – 5
Garlic – 4pods
Tomato – 1 small
Curry leaves - few
Pepper corns – 1tsp
Fennel/Saunf/Sombu – 1tsp
Cumin/Jeera – 1tsp
Chilli powder – ¼ tsp
Salt – ½ tsp or required
Gingelly oil – 2 tsp
Coriander leaves

Method

* Boil nattukozhi pieces with a pinch of salt, turmeric powder, and some water. If you are making large amount cook the pieces in a pressure cooker and retain the broth/cooked water.

* Since I made nattukozhi gravy also I cooked chicken pieces in a cooker and took some pieces for this soup.

* Chop shallots. If shallots are not available, use one medium size big onion.

* Chop tomatoes.

* Crush garlic pods. Crushing gives a strong flavor compared to chopping.

* Dry grind peppercorns, saunf, and cumin seeds.

* Heat a tawa or sauce pan, add gingelly oil.

* Add chopped onions and fry till light brown state.

* Add crushed garlic, curry leaves and saute for two mins

* Add tomato pieces, turmeric powder a pinch.

* Add the pepper, cumin, sombu powder mix.

* Once tomatoes turn mushy add the boiled nattukozhi pieces along with broth(cooked water).

* Add chilli powder. This is optional just to give extra taste.

* Add the required salt.

* Let the soup boil for five mins to mix with the spices.

* Garnish with coriander leaves. Serve hot.
