Recipe- Vrat Special for Janmashtami Samak Chawal ki Kheer

Samak Chawal ki Kheer is the perfect dessert during a Janmashtami vrat. This recipe uses Samvat rice or Samak Chawal or Parsai ke Chaawal which are tiny, round grains belonging to the millet family. This variety of millet is permitted to be eaten during a vrat.

Samak Chawal is high in digestible fiber and is similar to rice in taste and texture. Do keep in mind that Samak Chawal is stickier than rice when cooked.

Ingredients

5 cups full cream milk
¼ cup samwat / parsai ke chaawal, washed
½ cup sugar
10-12 raisins
4 green cardamoms
10-12 almonds, blanched and shredded

Method

* Put rice and milk in a deep pan and bring to a boil.

* Simmer over low flame, stirring occasionally till the rice is cooked and milk has thickened.

* Takes about 25 minutes. Actually cooking time depends on how thick you want the kheer, so cook accordingly.

* When cooked, add sugar, raisins and green cardamoms. Stir till sugar is dissolved and 10-15 minutes after that.

* Transfer onto a serving dish, garnish with the almonds. Serve hot or chilled.
