Ingredients

500g minced lamb or beef
1 cup chana dal (split chickpeas)
1 onion, chopped
4-5 green chillies, chopped
2 tbsp ginger garlic paste
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala powder
Salt to taste

Method

- Soak the chana dal in water for 2-3 hours. Drain the water and add the dal to a pressure cooker along with 1 cup of water. Cook for 3-4 whistles or until the dal is soft and cooked through.

- In a large mixing bowl, add the minced meat, chopped onion, green chillies, ginger garlic paste, cumin powder, coriander powder, garam masala powder, and salt to taste. Mix well.

- Add the cooked chana dal to the mixing bowl and mix again until everything is well combined.

- Using a food processor, grind the mixture to a fine paste. You can also use a meat grinder for this step.

- Make small round patties from the mixture and set aside.

- Heat oil in a pan for frying. Once the oil is hot, add the patties and fry until they are golden brown on both sides.

- Serve hot with mint chutney or tomato ketchup.

Variations:

There are many variations of shami kebabs depending on the region of India and personal preference. Some people add boiled potatoes to the mixture to make it more filling. Others use different types of lentils or beans in place of chana dal. Some even add dried fruits and nuts to the mixture for added texture and flavor.
