For Making Chhena (Fresh Paneer)1 litre full-fat milk
2 tablespoons lemon juice or vinegar
2 tablespoons water
For Chocolate Sandesh250 grams fresh chhena (prepared above)
2 tablespoons unsweetened cocoa powder
2–3 tablespoons sugar-free sweetener (as per taste)
2 tablespoons milk powder (optional, for a richer texture)
½ teaspoon vanilla extract
1 tablespoon finely chopped nuts (almonds/walnuts) (optional)
A pinch of cardamom powder
Dark chocolate shavings (optional, for garnish)
How to Make Sugar-Free Chocolate Sandesh
Step 1: Prepare Fresh ChhenaHeat 1 litre milk in a heavy-bottomed pan and bring it to a boil.
Reduce the flame and slowly add lemon juice mixed with water.
Stir gently until the milk curdles and the whey separates.
Strain the curdled milk using a muslin cloth.
Wash the chhena with cold water to remove the sour taste of lemon.
Hang the cloth for 30–45 minutes to drain excess water.
The chhena should be soft and moist, not completely dry.
Step 2: Knead the ChhenaTransfer the chhena onto a clean plate or kitchen surface.
Knead it with your palms for 8–10 minutes until it becomes smooth and creamy.
Proper kneading is important to achieve the soft, melt-in-mouth texture of Sandesh.
Step 3: Prepare Chocolate MixtureHeat a non-stick pan on low flame.
Add the smooth chhena, cocoa powder, milk powder, and sugar-free sweetener.
Mix everything well.
Cook on low heat for 3–5 minutes while continuously stirring.
Once the mixture becomes slightly thick and leaves the sides of the pan, turn off the flame.
Add vanilla extract and cardamom powder.
Avoid overcooking, as it can make the Sandesh dry.
Step 4: Shape the SandeshAllow the mixture to cool slightly.
Grease your hands lightly with ghee.
Take small portions and shape them into round balls or traditional Sandesh shapes.
Garnish with chopped nuts or dark chocolate pieces.
Step 5: Chill and Serve
Refrigerate the Sugar-Free Chocolate Sandesh for 1–2 hours before serving.
Serve chilled for the best taste and texture.
