Recipe- Healthy and Delicious Cauliflower Fried Rice

Cauliflower fried rice is delicious cauliflower rice recipe that is healthy, vegetarian, gluten-free and Keto. If you are looking to eat healthier this flavourful Indian cauliflower rice recipe is just perfect.Cauliflower is one vegetable that I am completely in love with. I know some of you do not love it that much, but here in our home we can eat it almost every day.

Ingredients

800 grams Cauliflower rice
½ cup Onion chopped
¼ cup tomatoes chopped
¼ cup carrots chopped
1 cup mushrooms chopped
⅕ cup cashew toasted or fried
1 Tablespoon oil
½ teaspoon finely chopped ginger
¼ teaspoon garlic paste
1 teaspoon cumin seeds
½ teaspoon garam masala powder
½ teaspoon red chilli powder/paprika as per your choice

Method

- Heat oil in a pan and add cumin seeds, once cumin seeds start to pop up add ginger and garlic paste.

- Immediately add chopped onion and sauté then till translucent.

- Now add chopped tomatoes and cook for 2-3 more minutes.

- Add finely carrots and mushrooms. Then cook it till the vegetables are well done.

- Add, salt to taste, garam masala, red chilli powder and mix in the masala.

- Finely add cauliflower rice, mix and cover the pan.

- Cook for 5 Minutes and serve the cauliflower fried rice hot.

- Top them with fried cashew and some chopped coriander and serve with yogurt.
