Recipe- Reuse Bachi Roti With Poha

Leftover Roti Poha uses leftover rotis and few Indian spices. This is a delicious and healthy breakfast and snack option. Many times we have rotis left from lunch or dinner and we have no idea how to make a delicious dish out of it. Instead of eating them again as it is, here comes a tasty solution – let’s make delicious roti poha for a yummy and quick breakfast/snack out of it. This is quick and easy to prepare using fewer ingredients. It is a yummy and healthy dish as well. By making this roti poha we can reduce the food wastage. Ingredients

Leftover rotis/Indian flat bread - 2
Onion/pyaz -1 small sized chopped
Potato - 1 small sized chopped
Green chili/Hari mirch - 1 chopped
Ginger - 1/2 inch piece grated
Roasted peanuts/moongfali - a handful
Coriander leaves/Dhaniya patta - a hand full chopped
Curry leaves - few
Lemon - 1/2
Mustard seeds/Rai - 1/2 Teaspoon
Salt - as per taste
Garam Masala/All spice mix - 1/2 Teaspoon
Turmeric/Haldi powder - 1/4 Teaspoon
Namkeen Sev, Boondi - as required for garnishing
Oil - 2 Tablespoon

Method

* Crush the roti in grinder to make a coarse powder.

* Heat oil in a pan and add mustard seeds, green chilli, grayed ginger and curry leaves to it.

* Add chopped potato and saute it. Add little salt and mix well.

* Cover and cook until the potato is cooked.

* Then add chopped onion and saute them till they turn pinkish.

* Add roasted peanuts and mix well.

* Add salt, turmeric powder, garam masala and mix.

* Then add the crushed roti in the pan. Mix all the ingredients.

* Add lemon juice and coriander leaves. Mix well then switch off the flame.

* Delicious 'Bachi Roti Ka Poha, Leftover Roti Poha' is ready to be served.

* Garnish namkeen sev, boondi and serve with a cup of tea.
