Method

- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

- In a medium-sized bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Set aside.

- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

- Add the egg to the butter-sugar mixture, followed by the vanilla extract. Mix until well combined.

- Alternate adding the dry flour mixture and the sour cream to the wet ingredients, beginning and ending with the flour mixture. Mix until just combined, being careful not to overmix.

- Stir in the cooled brewed coffee until evenly incorporated into the batter.

- Pour the batter into the prepared cake pan and spread it evenly with a spatula.

- If desired, sprinkle chopped nuts evenly over the top of the batter.

- Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

- Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

- Serve slices of coffee cake with a steaming cup of your favorite coffee for the perfect pairing.
