Method

- Heat oil or ghee in a pan and add mustard seeds and cumin seeds. Allow them to splutter.

- Add chopped onions, green chili, and curry leaves. Saute until the onions turn translucent.

- Add chopped carrots and green peas. Cook for a few minutes until the vegetables are slightly tender.

- In the same pan, add vermicelli and roast it on medium heat until it turns golden brown and aromatic. Stir continuously to prevent burning.

- Boil water separately in a saucepan.

- Add the boiled water to the pan with roasted vermicelli and vegetables.

- Add salt to taste and stir well. Cover the pan and let it cook on low heat for about 5-7 minutes or until the vermicelli is cooked and the water is absorbed.

- Remove from heat and let it sit for a couple of minutes.

- Garnish with fresh coriander leaves and serve hot. Squeeze some lemon juice over the upma for added flavor, if desired.
