4 medium-sized zucchinis
1 cup soya granules
1 onion, finely chopped
2 tomatoes, chopped
2 cloves garlic, minced
1 teaspoon cumin seeds
1 teaspoon chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
2 tablespoons cooking oil

- Wash the zucchinis thoroughly and cut them in half lengthwise.
- Scoop out the centers to create a hollow space for the stuffing. Chop the scooped zucchini flesh finely and set aside.
- In a bowl, soak the soya granules in hot water for 10 minutes. Drain and squeeze out the excess water.
