Ingredients

2 cups basmati rice
1 lb. boneless chicken or lamb, cut into pieces
2 onions, sliced
1 tbsp ginger-garlic paste
1 cup plain yogurt
1 tsp red chili powder
1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp garam masala
1/2 tsp black pepper powder
1 tsp salt
1/2 cup oil or ghee
2-3 bay leaves
4-5 cloves
4-5 cardamom pods
1 cinnamon stick
1/2 cup chopped mint leaves
1/2 cup chopped coriander leaves
1/2 cup fried onions

Method:

- Wash the rice and soak it in water for 30 minutes.

-In a large bowl, mix together the chicken or lamb, sliced onions, ginger-garlic paste, yogurt, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, black pepper powder, and salt. Mix well and marinate for at least 30 minutes.

- In a large pot, heat the oil or ghee over medium heat. Add the bay leaves, cloves, cardamom pods, and cinnamon stick and sauté for a few seconds until fragrant.

- Add the marinated meat and sauté for 10-15 minutes until browned and cooked through.

- Drain the rice and add it to the pot along with 4 cups of water. Add the chopped mint and coriander leaves and mix well. Bring to a boil, then reduce the heat to low and cover with a lid. Cook for 20-25 minutes until the rice is fully cooked and fluffy.

-Once the rice is cooked, remove the pot from the heat and let it sit covered for 10-15 minutes.

-To serve, garnish the biryani with fried onions and serve hot with raita or a side salad.
