Healthy and Tasty Sprouts Salad

Eating healthy every day can be challenging for many people, especially when nutritious meals are often considered bland and tasteless. This common misconception can discourage home cooks from following a healthy diet. However, a fresh and flavourful sprouts salad recipe can change that perception. With its satisfying crunch, vibrant colours, and refreshing taste, this healthy dish makes eating nutritious food enjoyable.

One of the biggest challenges when preparing sprouts salad is preventing the sprouts from becoming bitter, soggy, or unpleasantly soft. The secret lies in using the right preparation techniques, which help preserve their texture and freshness. With a few simple steps, you can prepare a delicious, crunchy, and refreshing salad at home without much effort.

Sprouts are rich in essential nutrients, dietary fibre, and other beneficial plant compounds. They can support digestion and contribute to a balanced diet. This easy vegetarian recipe combines fresh sprouts with a colourful assortment of garden vegetables, adding extra crunch, flavour, and texture. It is an excellent choice for a light lunch, a mid-meal snack, or a healthy accompaniment to your everyday meals.

Getting the spice balance right is another important part of making a delicious sprouts salad. Using too much salt or heavy, store-bought dressings can overpower the natural flavours of the ingredients. Instead, this recipe features a light homemade dressing made with tangy lime juice and simple seasonings. It complements the fresh, earthy taste of green mung bean sprouts, creating a refreshing and flavourful dish that is both satisfying and easy to prepare.

Ingredients for Sprouts Salad

Main ingredients

- 1 cup green moong bean sprouts
- 1 medium cucumber, finely chopped
- 1 medium tomato, finely chopped
- 1 small onion, finely chopped
- 1 small carrot, grated
- 1 green chilli, finely chopped (optional)
- 2 tablespoons fresh coriander leaves

For the dressing

- 1–2 tablespoons fresh lemon juice
- ¼ teaspoon roasted cumin powder
- ¼ teaspoon black pepper powder
- ¼ teaspoon chaat masala (optional)
- Salt to taste
- 1 teaspoon olive oil (optional)

Method

Step 1: Prepare the sprouts

Take one cup of fresh green moong bean sprouts and rinse them thoroughly under clean running water. Drain the excess water using a strainer. For food safety, especially for children, pregnant people, older adults, or anyone with a weakened immune system, cook the sprouts thoroughly rather than eating them raw.

Step 2: Lightly cook the sprouts

Steam or boil the sprouts until they are thoroughly cooked but still retain some texture. This usually takes around 5–10 minutes, depending on their size and freshness. Drain them well and allow them to cool before mixing them with the vegetables. Avoid leaving excess water in the sprouts, as it can make the salad soggy.

Step 3: Chop the vegetables

Wash the cucumber, tomato, carrot, onion, green chilli, and coriander thoroughly. Chop the cucumber, tomato, and onion into small, even pieces. Grate the carrot and finely chop the coriander leaves. Uniformly chopped vegetables make the salad easier to eat and help distribute the flavours evenly.

Step 4: Combine the ingredients

Transfer the cooled sprouts to a large mixing bowl. Add the chopped cucumber, tomato, onion, grated carrot, green chilli, and fresh coriander. Toss gently with a spoon so that the ingredients are evenly distributed without crushing the sprouts.

Step 5: Prepare the dressing

In a small bowl, combine lemon juice, roasted cumin powder, black pepper, salt, and chaat masala, if using. Add olive oil for a slightly richer flavour, if desired. Mix well until the seasonings are combined. This simple homemade dressing enhances the natural flavour of the sprouts without overpowering them.

Step 6: Toss and serve

Pour the dressing over the sprouts and vegetables just before serving. Toss everything gently and taste to adjust the seasoning. Garnish with fresh coriander and a few drops of lemon juice. Serve immediately for the best flavour and texture.
