Method

- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

- In a medium-sized bowl, sift together the all-purpose flour, baking powder, and salt. Set this dry mixture aside.

- In a separate large mixing bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy.

- Add the egg, pure vanilla extract, and lemon zest (if using) to the butter-sugar mixture. Mix until well combined.

- Gradually add the sifted dry ingredients to the wet mixture. Mix until a smooth dough forms.

- Form the dough into a disk, wrap it in plastic wrap, and refrigerate it for about 30 minutes. Chilling the dough makes it easier to work with.

- Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness. Use a Linzer cookie cutter to cut out the top and bottom halves of the cookies.

- For the top halves, use a smaller shape within the Linzer cutter (usually a small circle or heart) to create a cutout in the center of each cookie.

- Place the cookies on the prepared baking sheets and bake for 10-12 minutes, or until they are just beginning to turn golden at the edges. Be careful not to overbake.

- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

- Once the cookies are cool, spread a thin layer of your favorite jam on the bottom halves of the cookies (the ones without the cutouts). Then, place the top halves (the ones with the cutouts) on top.

- Dust the tops of the assembled Linzer Cookies with confectioners' sugar for a lovely finishing touch.
