Recipe- Mouthwatering Chicken Noodles

Of all Chinese recipes noodles always hold a special place in my kitchen because my kids love noodles. I love to try a variety of noodles recipes, regardless of which cuisine it is from like Indo-Chinese, purely Chinese, or type like wheat noodles, egg noodles, Japanese rice noodles, millet noodles, purely Indian sauce noodles and so. It is completely our personal preference and imagination. Let’s see my way of Chinese chicken chowmein today.

Ingredients

3 noodles cakes to serve 4
2 tsp oil
¾ tsp salt
1 ½ lit water approx
1 tbsp corn starch
4 tbsp water
1 tsp chilli sauce
½ tsp soya sauce
¼ tsp sugar
¾ tsp salt
¾ tsp pepper powder
½ tsp lemon juice
1 tsp sesame oil
200 g boneless chicken
4 tbsp sesame oil
1 inch ginger
4 garlic pods
½ cup onion
½ cup carrot
½ cup beans
1 cup cabbage
¼ cup capsicum
½ cup green onions

Method

* Chop all the vegetables including onion, garlic and ginger in julienne type (lengthwise) cut.

* Cut cabbage as lengthy strands and keep aside.

* In a bowl, take corn starch, add some water and make a thin paste.

* Add chilli sauce, soya sauce, Oyster sauce(optional if you have. I didn’t add), brown sugar and salt.

* Also, add pepper powder and vinegar or lime juice with some sesame oil and mix.

* Keep this sauce mix ready.

* Boil lots of water up to roll boiling stage and add oil, salt.

* Add the noodles cake and cook until soft. Basically you have to follow the instructions given in your noodles packet. Cook, drain water and keep aside in a flat plate to cool down.

* Take a large wok or pan and heat sesame oil. Keep the heat source on high mode during the whole cooking.

* Saute ginger and garlic pieces.

* Add onion, carrot, beans, and capsicum.

* Put cabbage strands and saute everything for two minutes in high heat.

* Now add chicken pieces and keep stirring until the chicken cooked well. You can see the chicken become white in color.

* Now add the sauce mix and stir with the veggies and chicken.

* At this stage, you can add salt and pepper powder if you wish spicier. Remember we added salt while cooking the noodles.

* Mix noodles gently with forks or ladle with the sauce base. Try to do without breaking the noodles.

* Switch off immediately and serve hot.
