Method

- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

- In a medium-sized saucepan, bring the milk to a boil. Add the soaked and drained rice to the boiling milk and reduce the heat to low. Simmer for about 25-30 minutes, stirring occasionally until the rice is cooked and the mixture thickens.

- In a blender, puree the ripe mangoes to obtain a smooth pulp. Set aside.

- Once the rice is cooked and the mixture has thickened, add the condensed milk and sugar to the saucepan. Stir well to combine and continue cooking for another 5 minutes.

- Add the mango pulp, cardamom powder, and saffron strands (if using) to the rice mixture. Mix thoroughly and cook for an additional 2-3 minutes.

- Remove the saucepan from the heat and allow the kheer to cool to room temperature. The kheer will thicken further as it cools.

- Once cooled, refrigerate the Aam Ki Kheer for at least 2 hours or until chilled.

- Serve the Aam Ki Kheer in individual bowls or glasses, garnished with chopped nuts like almonds and pistachios.
