Method

- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

- In a small saucepan, combine the raisins and rum. Heat over medium-low heat until the rum begins to simmer. Remove the saucepan from the heat and let the raisins soak in the rum for about 15-20 minutes, allowing them to plump up and absorb the flavors.

- In a medium mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy using a hand mixer or stand mixer.

- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

- Fold in the rum-soaked raisins along with any remaining rum, ensuring they are evenly distributed throughout the batter.

- Pour the batter into the prepared cake pan and spread it out evenly with a spatula.

- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

- Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

- Serve the Rum Raisin Cake slices on their own or with a dollop of whipped cream or a drizzle of caramel sauce for an extra indulgent touch.

- Enjoy your delicious Rum Raisin Cake with friends and family, savoring each bite of its moist texture and delightful flavor.
