Ingredients

500g chicken (boneless or with bone, as per preference)
1 tbsp ginger-garlic paste
1 tbsp red chili powder
1 tbsp coriander powder
1 tsp cumin powder
1/4 tsp turmeric powder
Salt to taste
2 tbsp lemon juice
2 tbsp oil
10-12 curry leaves
2 medium-sized onions, sliced
2-3 green chilies, slit
Coriander leaves for garnishing

Method:

- Wash the chicken and marinate it with ginger-garlic paste, red chili powder, coriander powder, cumin powder, turmeric powder, salt, and lemon juice. Keep it aside for at least 30 minutes.

- Heat oil in a pan and add curry leaves to it. Let it splutter for a few seconds.

- Add sliced onions and green chilies to the pan and sauté them until the onions turn golden brown.

- Add the marinated chicken to the pan and mix it well with the onions and green chilies.

- Cover the pan with a lid and let it cook on low to medium heat for about 20-25 minutes or until the chicken is cooked and tender.

- Uncover the pan and stir the chicken occasionally to prevent it from sticking to the bottom of the pan.

- Once the chicken is cooked, increase the heat to high and fry it for a few more minutes until it turns golden brown and crispy.

- Garnish with coriander leaves and serve hot with steamed rice or roti.
