Method

- Wash the green chillies thoroughly and pat them dry with a clean kitchen towel. Remove the stems and slit the chillies lengthwise, ensuring they remain intact.

- In a dry pan, lightly roast the mustard seeds and fenugreek seeds until they release their aroma. Allow them to cool down and grind them into a coarse powder using a mortar and pestle or a spice grinder.

- Heat oil in a pan on low heat. Add asafoetida (hing), turmeric powder, and the ground mustard-fenugreek powder. Mix well and sauté for a minute until the spices release their flavors.

- Add the slit green chillies to the pan and toss them gently in the spice mix. Ensure that the chillies are coated evenly with the spices.

- Cook the chillies on low heat for about 5-7 minutes, stirring occasionally. The chillies will start to soften slightly.

- Turn off the heat and let the pickle cool down completely.

- Once cooled, add salt and lemon juice to the pickle. Adjust the salt and lemon juice according to your taste preferences.

- Transfer the pickle to a clean, sterilized jar. Ensure that the chillies are fully immersed in the oil and spice mixture. This helps in preserving the pickle for a longer duration.

- Close the jar tightly and store it in a cool, dry place away from direct sunlight.

- Allow the pickle to mature for at least a couple of days to develop the flavors. Shake the jar gently every few days to ensure the spices are well distributed.
