Ingredients

For the Panjeeri


2 cups makhana (fox nuts)
3 tablespoons desi ghee
10–12 almonds, finely chopped
10–12 cashews, chopped
1 tablespoon pistachios, chopped
1 tablespoon raisins
2 tablespoons dry coconut, grated
½–¾ cup mishri, powdered or lightly crushed
½ teaspoon cardamom powder
1 tablespoon melon seeds, optional
1 tablespoon chironji, optional

For Garnishing


Chopped almonds
Pistachio slivers
A few whole roasted makhanas
Small pieces of mishri

Method

Step 1: Roast the Makhana


Heat a heavy-bottomed pan over low to medium heat. Add about 1 tablespoon of ghee.

Add the makhana and roast them on low heat for around 5–7 minutes, stirring continuously.

The makhana should become crisp and lightly roasted. Avoid roasting them on high heat because they can burn from the outside while remaining chewy inside.

To check whether they are ready, take one makhana and press it between your fingers. It should break easily and feel crunchy.

Transfer the roasted makhana to a plate and allow it to cool completely.

Step 2: Grind the Makhana

Once the makhana has cooled, transfer it to a mixer grinder.

Pulse a few times until you get a slightly coarse powder.

Do not grind it into an extremely fine powder. A slightly coarse texture gives the panjeeri a more enjoyable bite.

Keep the ground makhana aside.

Step 3: Roast the Dry Fruits

Place the same pan back on low heat and add another tablespoon of ghee.

Add chopped almonds, cashews, pistachios and melon seeds.

Roast them gently for 2–3 minutes until they become aromatic and lightly golden.

Add the raisins and roast for a few seconds. The raisins will puff up slightly.

Transfer the roasted dry fruits to a plate.

Step 4: Roast the Coconut


Add the grated dry coconut to the pan.

Roast it on low heat for approximately 1–2 minutes, stirring continuously.

The coconut should become fragrant but should not turn dark brown, as over-roasting can give it a bitter taste.

Step 5: Combine the Ingredients

Take a large mixing bowl and add the coarsely ground makhana.

Add the roasted dry fruits and coconut.

Mix everything thoroughly.

Now add the powdered or crushed mishri and cardamom powder.

Mix again until all the ingredients are evenly combined.

Step 6: Add the Final Touch

If the mixture appears slightly dry, you can add another teaspoon of warm ghee and mix well.

Taste the panjeeri and adjust the sweetness if required.

Allow it to cool completely before transferring it to a serving bowl or airtight container.
