Ingredients

For frying paneer:

250g paneer (cut into cubes)
3 tbsp cornflour
2 tbsp all-purpose flour (maida)
Salt to taste
½ tsp black pepper
Water (to make a thick batter)
Oil for frying

For sauce:

2 tbsp oil
1 tbsp chopped garlic
1 tbsp chopped ginger
2 green chilies (slit)
1 onion (cubed)
1 capsicum (cubed)
2 tbsp soy sauce
1 tbsp chili sauce
1 tbsp tomato ketchup
1 tsp vinegar
½ tsp black pepper
Salt (as needed)

For slurry:

1 tsp cornflour + 2 tbsp water

Step-by-Step Method

1. Prepare the batter

Mix cornflour, maida, salt, and pepper. Add water to form a thick, smooth batter. Coat paneer cubes well.

2. Fry for crispiness

Heat oil on medium-high flame. Fry paneer until golden and crisp. Remove and set aside.

Tip: Double-fry for extra crunch (this is what restaurants do!)

3. Make the base
In a wok or heavy pan, heat oil. Add garlic, ginger, and green chilies. Sauté on high flame for a few seconds.

4. Toss veggies

Add onions and capsicum. Stir-fry on high heat to keep them crunchy.

5. Add sauces

Pour in soy sauce, chili sauce, ketchup, and vinegar. Mix quickly on high flame.

6. Bring it together

Add fried paneer and toss well so it absorbs all flavors.

7. Thicken the sauce

Add cornflour slurry and cook for a minute until you get a glossy coating.
