Ingredients
1 cup rolled oats or quick oats
½ cup rice flour
¼ cup semolina (rava/suji)
½ cup plain curd (optional, for extra softness)
2½ to 3 cups water
1 medium onion, finely chopped
1 green chilli, finely chopped
1 teaspoon grated ginger
2 tablespoons coriander leaves, chopped
½ teaspoon cumin seeds
8-10 curry leaves, finely chopped
Salt to taste
Oil for cooking
How to Prepare Oats Flour
Dry roast the oats in a pan for 2-3 minutes on low heat.
Allow them to cool completely.
Transfer the oats to a mixer grinder and blend into a fine powder.
Set aside.
How to Make the Batter
In a large mixing bowl, combine oat flour, rice flour, and semolina.
Add curd and mix well.
Pour in water gradually while stirring continuously to avoid lumps.
Add chopped onions, green chilli, ginger, coriander leaves, curry leaves, cumin seeds, and salt.
Mix thoroughly to form a thin, flowing batter.
Let the batter rest for 10-15 minutes.
If the batter thickens after resting, add a little more water to achieve a runny consistency.
How to Make Oats Dosa
Heat a non-stick or cast-iron tawa on medium heat.
Lightly grease it with a few drops of oil.
Stir the batter well before each dosa, as the ingredients tend to settle.
Pour the batter from the outer edge towards the center. Do not spread it like regular dosa batter.
Fill any large gaps with a few drops of batter.
Drizzle a little oil around the edges.
Cook on medium flame for 2-3 minutes until the bottom becomes golden and crisp.
Flip the dosa and cook the other side for about a minute.
Repeat with the remaining batter.
