Ingredients

For the Paneer Filling


250 grams paneer, cut into thin strips or cubes
1 tablespoon oil
1 medium onion, thinly sliced
1 medium capsicum, thinly sliced
1 teaspoon ginger-garlic paste
½ teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
½ teaspoon cumin powder
½ teaspoon garam masala
1 teaspoon chaat masala
Salt to taste
1 teaspoon lemon juice
2 tablespoons chopped coriander leaves

For the Rolls

4 rotis or parathas
1 small onion, thinly sliced
1 small cucumber, julienned (optional)
1 small carrot, grated (optional)

For the Sauce

3 tablespoons green chutney
3 tablespoons mayonnaise or hung curd
1 teaspoon tomato ketchup (optional)

Method

Step 1: Prepare the Paneer Filling


Heat oil in a pan over medium heat.
Add sliced onions and sauté until slightly soft.
Add ginger-garlic paste and cook for 1 minute.
Add capsicum and cook for 2–3 minutes while retaining some crunch.
Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt.
Mix well and cook the spices for a minute.
Add paneer strips and gently toss to coat them with the masala.
Cook for 3–4 minutes without overcooking the paneer.
Add chaat masala, lemon juice, and chopped coriander leaves.
Mix well and switch off the heat.

Step 2: Prepare the Rotis

Heat a tawa or skillet.
Warm the rotis or parathas on both sides.
Lightly toast them until soft yet sturdy enough for rolling.

Step 3: Assemble the Rolls

Place a warm roti on a flat surface.
Spread a thin layer of green chutney and mayonnaise or hung curd.
Add a layer of sliced onions, cucumber, and grated carrot.
Place a generous portion of the paneer filling in the center.
Sprinkle a little extra chaat masala if desired.
Fold the sides slightly and roll tightly.

Heat a tawa with a few drops of oil or butter.
Place the rolled wraps seam-side down.
