Ingredients for Mor Kuzhambu Recipe

For the Yogurt Mixture


2 cups sour curd (yogurt)
1 cup water (adjust consistency as needed)
½ teaspoon turmeric powder
Salt as per taste

For Coconut Spice Paste

½ cup freshly grated coconut
2 tablespoons raw rice (soaked for 15–20 minutes)
1 tablespoon coriander seeds
1 teaspoon cumin seeds
2–3 green chillies (adjust according to spice preference)
1 teaspoon fenugreek seeds (methi seeds)
½ inch ginger
A small handful of curry leaves
Water as required for grinding

Vegetables (Choose Any One)

1 cup ash gourd pieces (white pumpkin)
OR
1 cup chopped okra (bhindi)
OR
1 cup pumpkin pieces
OR
1 cup boiled colocasia (arbi)

For Tempering

2 tablespoons coconut oil or vegetable oil
1 teaspoon mustard seeds
½ teaspoon cumin seeds
1 teaspoon urad dal
1–2 dried red chillies
A pinch of asafoetida (hing)
Few curry leaves

Step-by-Step Method to Prepare Mor Kuzhambu

Step 1: Prepare the Coconut Spice Paste


Soak raw rice and fenugreek seeds for about 15–20 minutes. This helps create a smooth and creamy texture.
Add grated coconut, soaked rice, coriander seeds, cumin seeds, green chillies, ginger, fenugreek seeds, and curry leaves to a blender.
Add a little water and grind everything into a smooth paste.
Keep the prepared paste aside.

The coconut paste is the heart of Mor Kuzhambu and gives the curry its traditional flavor and thickness.

Step 2: Cook the Vegetables

Wash and chop your choice of vegetables into bite-sized pieces.
Cook them with a little water, turmeric powder, and salt until they become soft.
Avoid overcooking the vegetables as they should maintain their shape and texture.

For okra Mor Kuzhambu:

Fry chopped okra in a little oil until the stickiness disappears.
Keep it aside and add it later to the curry.

Step 3: Prepare the Yogurt Base

Whisk the curd well until smooth and lump-free.
Add water gradually and mix to create a thin buttermilk-like consistency.
Add turmeric powder and salt.
Mix the prepared coconut paste into the yogurt mixture.

Make sure the curd is at room temperature before adding it to the pan.

Step 4: Cook the Mor Kuzhambu

Add the yogurt and coconut mixture to a heavy-bottomed pan.
Cook on low flame, stirring continuously.
Heat gently until the curry becomes warm and slightly thick.
Do not allow it to boil, as boiling can cause the yogurt to split.
Once you see steam rising and the curry becomes creamy, switch off the flame.

Step 5: Prepare the Tempering

Heat coconut oil in a small pan.
Add mustard seeds and allow them to crackle.
Add cumin seeds, urad dal, dried red chillies, curry leaves, and hing.
Fry until the dal turns golden and aromatic.
Pour this tempering over the prepared Mor Kuzhambu.

Mix gently and cover for 2–3 minutes to allow the flavors to blend.
