Bharwa Bhindi, also known as stuffed okra, is a popular Indian recipe loved for its rich flavours, aromatic spices and delicious taste. This traditional dish is prepared by stuffing fresh bhindi (okra or ladyfinger) with a flavourful mixture of Indian spices, gram flour, coriander powder, fennel powder, amchur and other ingredients. The stuffed bhindi is then cooked slowly in oil until it becomes tender on the inside and slightly crisp on the outside.
Popular in Rajasthan, Gujarat, Uttar Pradesh and other parts of India, Bharwa Bhindi is a wonderful addition to everyday meals. It pairs perfectly with roti, paratha, puri or dal and rice. The best part is that this recipe does not require an elaborate preparation process, making it suitable for both beginners and experienced cooks.
Whether you are preparing a special family lunch or looking for a flavourful vegetable dish for your regular meals, this easy Bharwa Bhindi recipe will help you make a delicious, restaurant-style dish at home.
Ingredients
For the bhindi
- 500 grams fresh bhindi (okra or ladyfinger)
- 3 tablespoons oil, preferably mustard oil or any regular cooking oil
- ¼ teaspoon cumin seeds
- A pinch of asafoetida (hing), optional
- Salt, as required
For the stuffing masala
- 2 tablespoons coriander powder
- 1 tablespoon fennel powder (saunf powder)
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric powder
- 1 teaspoon amchur powder (dry mango powder)
- ½ teaspoon garam masala
- 1 teaspoon cumin powder
- 1 tablespoon gram flour (besan), optional
- 1 tablespoon oil
- Salt, to taste
Optional ingredients: You can add ½ teaspoon carom seeds (ajwain), a pinch of kasuri methi or 1 teaspoon roasted peanut powder to give the stuffing a distinctive flavour.
How to Make Bharwa Bhindi at Home
Step 1: Wash and prepare the bhindi
Wash the bhindi thoroughly under running water to remove dirt and impurities. Spread it on a clean kitchen towel and let it dry completely. You can also wipe each piece with a dry cloth.
Trim the top and bottom ends of the bhindi. Make a lengthwise slit in each piece without cutting it completely through, so that it opens like a pocket for the stuffing.
Step 2: Prepare the stuffing masala
Take a bowl and add coriander powder, fennel powder, red chilli powder, turmeric powder, amchur powder, cumin powder, garam masala and salt.
Add gram flour if you prefer a thicker, slightly nutty stuffing. Mix all the spices thoroughly. Add one tablespoon of oil and combine until the mixture becomes slightly moist and holds together.
Step 3: Stuff the bhindi
Gently open each slit bhindi and fill it with the prepared spice mixture using your fingers or a small spoon. Press the stuffing lightly so that it stays inside.
Repeat the process with all the bhindi. Keep any leftover masala aside, as you can sprinkle it over the vegetables while cooking.
Step 4: Heat the oil
Place a wide, heavy-bottomed pan or kadai over medium heat. Add the remaining oil and let it warm up.
Add cumin seeds and allow them to crackle. If using hing, add a small pinch and stir briefly. This creates a fragrant base for the stuffed bhindi.
Step 5: Cook the stuffed bhindi
Carefully arrange the stuffed bhindi in the pan in a single layer. Reduce the heat to low or medium-low and cover the pan with a lid.
Cook for approximately 8–10 minutes, turning the pieces gently every few minutes to ensure even cooking. Avoid stirring too vigorously, as the stuffing may come out.
Step 6: Roast until tender
Remove the lid and cook for another 8–12 minutes over low to medium-low heat. Turn the bhindi gently from time to time until it becomes tender and develops a lightly roasted exterior.
Add any leftover stuffing masala and adjust the salt if necessary. If you prefer crispier bhindi, cook uncovered for the last few minutes. Avoid adding water, as it can make the dish soggy and increase sliminess.
Step 7: Serve hot
Once the bhindi is cooked through, turn off the heat. Garnish with freshly chopped coriander leaves if desired.
Transfer the Bharwa Bhindi to a serving dish and enjoy it hot with chapati, paratha, puri or a simple dal-rice meal.
