Winter Special- Simple and Comforting Gajar ka Halwa

Gajar ka Halwa is one of India’s most loved traditional winter desserts, especially popular in North India. Made using fresh red carrots, milk, ghee, sugar, and aromatic cardamom, this rich and comforting sweet is a staple during the cold months. The recipe is believed to have originated in the Mughal kitchens and has since become a household favorite, prepared during festivals, weddings, and special family gatherings.

Ingredients

1 kg red carrots (grated)

1 litre full-cream milk

4–5 tbsp ghee

¾ cup sugar (adjust to taste)

½ tsp cardamom powder

10–12 cashews (chopped)

10–12 almonds (slivered)

1–2 tbsp raisins

Method

- Heat ghee in a heavy pan and lightly sauté the grated carrots for 5–7 minutes.

- Add milk and cook on medium flame, stirring occasionally, until the milk reduces completely.

- Add sugar and cook again till the mixture thickens and leaves the sides of the pan.

- Add cardamom powder and dry fruits. Mix well.

- Cook for another 3–4 minutes and turn off the heat.
